Reliable road clutch for 500hp

I’m contemplating removing the twin plate set up from my Cossie engine and going back to a single plate standard size everyday use road clutch,

what are people using at this sort of power that drives nice? I already use a hydraulic slave release set up so pedal feel isn’t a bother I just fancy something that feels nice, not juddery and will deal with stop start traffic on occasions
